Harvest Bowl Salad (Sweetgreen) Recipe

You guys will LOVE this salad! I seriously can’t get enough of it. Whenever Will and I travel somewhere with a Sweetgreen, we immediately find it and cross our fingers they are selling the Harvest bowl (I believe it’s seasonal).

I use similar ingredients in my variation of the salad but I added the Trader Joe’s pumpkin spiced pumpkin seeds and it was the PERFECT addition for a fall salad. Or bowl. I don’t know what the heck makes a bowl vs. a salad… The amount of lettuce? I digress… here is what you will need to go buy!

Ingredients you’ll need:

  • Roasted/shredded chicken breasts (I used 4 medium-sized chicken breasts)
  • Bag of Kale (massage kale with 2 tbsp olive oil for about 5 minutes to get it nice & soft!)
  • Baked sweet potatoes (I cooked 3 of them)
  • Wild rice (I usually do 1 cup for a big salad for a party!)
  • Goat cheese (I usually do one half goat cheese from Costco)
  • Apples (I used Honeycrisp)
  • Trader Joe’s pumpkin spiced pumpkin seeds (if making in the fall! Or use any candied nuts… but these were the perfect addition & crunch, in my opinion!)
  • Balsamic vinaigrette dressing. My favorite thing is to make your own! Here is the recipe I use:

BALSAMIC VINAIGRETTE

  • 14cup olive oil
  • 2tablespoons high-quality balsamic vinegar
  • 2teaspoons Dijon mustard
  • kosher salt & freshly ground black pepper

In true recipe blogger rookie-ness, I don’t really measure out any ingredients but I pile it all together until it looks nice and full. It is soo good! You can add more/less of anything. Just do it to your own liking!
