Coconut All-American Flag Cake (4th of July)

4th of July Coconut Flag Cake Recipe

It’s that time of year again…   it’s time I make my favorite cake!

If you want to make the original recipe that I made for years, keep on scrolling! But this year, I decided to switch it up and LOVE the results. The base is a box cake and it was SO easy and delicious.

Ingredients:

Betty Crocker Super Moist White Cake Mix

3 eggs

1/2 cup of sour cream

1/2 cup of melted butter

3 cups of cold milk

1 bag of sweetened coconut (optional)

1 container of fresh strawberries

1 container of fresh blueberries

small box of vanilla instant pudding

8oz of Cool Whip

Instructions:

1. Set oven to 350º

2. Spray a 9×13 pan with spray

3. Take your Betty Crocker Super Moist White cake mix but don’t follow the directions. You’re going to add 3 eggs, 1/2 cup of sour cream, 1/2 cup of melted butter, and 1 cup of cold milk to the cake mix

4. Bake for 28 minutes (or until a toothpick tells you it’s done!)

5. Wash strawberries and blueberries, and cut your strawberries

6. Once your cake has completely cooled, make the frosting

7. Mix 2 cups of milk with a small box of vanilla instant pudding (3.4 oz) (make sure you do this first before adding the cool whip!)

8. Add 8 oz of Cool Whip to the bowl and mix together

9. Spread frosting over the cake

10. Add a layer of sweetened coconut (optional!)

11. Arrange cake in the flag formation

12. Save some berries on the side to add on top of people’s cakes! You’ll want more berries with it!

It is seriously SO easy and delicious and will be a hit at any party! 

Here is the old recipe I’ve used in years past too! This is great if you’d rather make the cake from scratch!

The base cake recipe is from one of my favorite cookbooks- Favorites

CAKE RECIPE:

  • 2 cups plus 2 tablespoons flour
  • 1 1/2 cups sugar, less 1 tablespoon
  • 1 tablespoon baking powder
  • 1 teaspoon salt

Mix dry ingredients together well then add:

  • 1/2 cup shortening
  • 1 cup milk
  • 1 teaspoon vanilla

Beat together for 1.5 minutes and add:

  • 3 eggs

Beat for another 1.5 minutes. Pour into greased and floured cake pan.

Bake at 350 degrees for 30-35 minutes. Cool in pan for 10 minutes, then remove from pan to finish cooling.

FROSTING RECIPE:

Combine in top of double boiler:

  • 1 1/2 cups sugar
  • 2 egg whites
  • 1 tablespoon light corn syrup
  • 1/2 cup water

Place over boiling water and beat with an electric beater for 7 to 8 minutes.

  • Add 1 teaspoon vanilla.

Remove pan from boiling water and frost cake

(may need to beat once more while frosting cake to keep frosting smooth)

Once frosted, cover the cake with sweetened coconut. 

Then arrange the fruit (blueberries + strawberries) to look like our beautiful flag!
